Paleo birthday cake….Coconut Chocolate Cake

1 cup 100% dark chocolate chopped
1/2 cup coconut milk
1 1/4 cups almond flour
1/2 cup unsweetened shredded coconut
2 eggs
1/2 tsp sea salt
1/2 tsp baking powder
1/2 cup chopped almonds

Preheat oven to 350 degrees,
melt chocolate and milk together either in microwave or over double boiler. Add rest of ingredients, mix well. Grease an 8″ round cake pan and line with parchment paper to make removing cake layer easier.
Bake 20-25 minutes

This makes 1 layer cake, however you may double the recipe and make 2 layers if you wish.

When cake is cooled, melt 1 cup of Dark Chocolate chips with 2 Tablespoons of Coconut oil this can be done quickly in microwave or double boiler…cool slightly until thickened, spread over top or between layers of your cake. Sprinkle with a 1/2 cup unsweetened coconut and or 1/2 cup chopped almonds.

Make some fresh whipping cream and PILE it on top…do not add any sweeteners

Top with some strawberries or blueberries, toasted coconut, chocolate shavings or more nuts

Well I dont normally do Birthday WOD’s for someone brand new, because I dont want them to ‘get scared off’ but this particular individual was requesting it secretly through his wife. So I obliged and we are honoring Fonz and his 26th Birthday today!! Happy Birthday!

Membership Management

Month-to-Month Membership Agreements and Annual Membership Agreements: You may place your Membership on hold two (2) times per calendar year up to three (3) consecutive months each time. Advanced notice of at least two (2) business days is required. The hold must be 30 days in duration at a minimum and 30 days must elapse between holds. Upon expiration of the term of the hold, your account will automatically become active and payments will resume. Should you choose to return prior to the end of their hold period, the hold will be released and payments will resume.

CANCELLATION POLICY

All membership agreements require 30-days written notice to cancel your membership. This form will serve as your 30-days written cancellation notice. Note that if you have a scheduled renewal payment within 30-days of your invoice billing date, the payment will be processed as scheduled. Your membership will be canceled at the end of your final paid month. All payments are non-refundable. All grandfathered membership rates will also be forfeited and returning members will be subject to current rates.
